Egg Scramble Recipe

Ingredients
  • 1/3 cup onion, chopped
  • 1/4 cup green pepper, chopped
  • 1/4 cup butter or margarine
  • 2 potatoes, peeled, cooked and diced (medium)
  • 1 1/2 cups ham, cooked and julienned
  • 6 eggs
  • 2 tablespoons Water
  • salt
  • pepper
  • 1 cup Cheddar Cheese, shredded
Directions
In a large skillet, cook onion and green pepper in butter until crisp-tender. Add potatoes and ham; cook and stir for 5 minutes. In a bowl, beat eggs, water, salt and pepper; pour over ham mixture. Cook over low heat, stirring occasionally, until eggs are set. Sprinkle with cheese on top.
