These cheese crisps are great as an appetizer and a delicious addition to soups and salads.

1/2 pound (8 oz.) Asiago, Kefalotiri, Parmesan-Reggiano, Montasio or any other semi-firm cheese

Preheat oven to 400°.
Slice the cheese very thin, preferrable less than 1/8 inch thick.
Place on a cookie sheet, making sure to leave room between each one so they have space to spread as they melt and bake.
Bake for approximately 4 minutes.
Watch them closely. They are done when the crisps turn light golden and blubbly.
Remove from the cookie sheet and lay them out on a cooling rack.
When cool, serve as a condiment with soups and salads or with your favorite dip as an appetizer.
