Muffins 6 Recipe

Ingredients
  • 1 cup softened margarine
  • 1 1/2 cups sugar
  • 1 1/3 cups soy milk
  • 1 teaspoon vanilla
  • 4 cups fruit or nuts (we like dates, coconuts or blueberries)
  • 4 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon Salt
  • 1/2 teaspoon cinnamon
Directions
With an electric mixer, cream margarine and sugar until fluffy. Add soy milk and vanilla and mix on low speed. Fold in fruit/nuts. Sift together the dry ingredients. Add to wet mixture and stir by hand until moist. DO NOT OVER MIX. Use a large ice cream scoop to fill greased muffin cups. Bake at 350 for 25-30 minutes until the center springs back.
