| Directions | With an electric mixer, cream margarine and sugar until fluffy. Add soy milk and vanilla and mix on low speed. Fold in fruit/nuts. Sift together the dry ingredients. Add to wet mixture and stir by hand until moist. DO NOT OVER MIX. Use a large ice cream scoop to fill greased muffin cups. Bake at 350 for 25-30 minutes until the center springs back. |
