Christmas Pickles 5 Recipe

  • Makes: approximately 10 cups
  • 8 cups cucumbers, sliced
  • 1 cup celery, cut up
  • 1 cup Onions, cut up
  • 1 cup red & green peppers, cut up
  • 1 1/2 tablespoons canning salt
  • 2 cups sugar
  • 1 cup vinegar
  • 1 teaspoon celery salt
  • 1/2 teaspoon mustard seed
Mix together cucumbers, onions, peppers, and canning salt. Let stand for 1/2 hour. Drain. Mix together the sugar, vinegar, celery salt, and mustard seed. Stir this mixture for 10 minutes, until thoroughly dissolved. Pour on the cucumber mix. Keep in the refrigerator, stir from time to time. These will be ready to eat in 2 days, and then can be kept for months.
