  • 3 sweet potatoes (Medium)
  • 1 stick butter or margarine
  • 2 cups sugar
  • 1 cup water
  • 1 tablespoon vanilla
Directions
Cut sweet potatoes into french fry shape. Boil until just starting to soften. Drain and add butter, sugar and water. Boil until water is greatly reduced, Thin syrup forms and potatoes are tender. Add vanilla.
