FRIED ONION RINGS Recipe

Ingredients
1 onion (large)
2 cups ice water
1 tablespoon sugar
oil for frying
BATTER
1 cup self rising flour
1/2 teaspoon Salt
2/3 cup tap water
1 tablespoon cooking oil
1 beaten egg white
Directions
Cut onion rings and place in ice water that has been sweetened with a heaping tablespoon of sugar. Put onion rings to soak in the refrigerator for at least two hours before frying. (The secret lies in the pre-soak.) Drain onion rings and dip in batter. Fry in deep, hot oil. A large onion will serve 4 to 6 people. NOTE: Do not prepare batter until frying time. Batter is also good used with eggplants and squash.
