Creamy Spinach & Artichokes Recipe

  • 4 cups fresh spinach
  • 1/2 cup chopped green onions
  • 6 tablespoons butter
  • 2 cups chopped artichoke hearts
  • 2 cups sour cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons lemon juice
  • 1/4 teaspoon garlic salt
  • 1/4 tablespoon nutmeg
Combine spinach (I use 8 c) with small amount of water in a saucepan. Cook over med heat, drain. Sauté green onions in butter. In a bowl, combine green onions and spinach, mix. Stir in artichoke hearts, sour cream (I use 1 c white sauce with 1 c sour cream), cheese, lemon juice, garlic salt and nutmeg. Put into 2 qt baking dish. Bake at 350° for 25 min or until bubbly.
