Panzanella (Bread Salad) 2 Recipe

  • 8 ounces stale, coarse bread
  • 3 ripe tomatoes (large)
  • 1 red onion (small)
  • 1/3 cup black olives, pitted
  • 1 handful fresh basil
  • 3 tablespoons wine vinegar
  • Salt and pepper
  • 1/2 cup olive oil
Soak the bread in water for a few minutes. Squeeze out well. Crumble into a mixing bowl.

Peel and dice the tomatoes. Slice onion paper thin. Combine the vegetables, olives and basil with the bread.

In a small bowl, mix vinegar with a pinch of salt and pepper and whisk in the olive oil. Toss with the salad and serve.

Serves 6.
