River Rat Caviar Recipe

Ingredients
  • 1 can great northern white beans
  • 1 can black beans
  • 1 can shoe peg corn
  • 1 jar chopped pimentos (small jar)
  • 3 cups chopped celery
  • 1 cup Sugar
  • 1 cup oil
  • 1/2 cup vinegar
Directions
Mix together sugar, oil and vinegar. Bring to a boil. Cool. Rinse all canned goods well. Combine all ingredients and let sit overnight. Drain and serve with tortilla chips such as scoops.
