Corn & Hominy Soup Recipe

Ingredients
  • 4 pounds short ribs (no substitutes)
  • 1 to large onion - chopped (medium)
  • 3 stalks celery - chopped
  • 2 quarts water
  • salt & pepper to taste
  • 2 cans - 15 ounce white hominy
  • 2 cans - 15 ounce whole kernal sweet corn
Directions
Combine in soup pot: water, meat, onion, celery, salt & pepper.

Cover & simmer until meat is tender - 1 1/2 to 2 hours.

Remove meat & bones from broth.

Discard bones and fat. Shred meat and return to broth.

Add corn & hominy.

Simmer on low heat for 30 minutes.

Ready to serve!
