Vegetable Lunch Loaf Recipe

Ingredients
  • 16 ounces shredded zucchini, carrots, and onion, sautéed
  • 2 Eggs
  • 2 ounces raw oats or oat bran
  • 1 tablespoon oil
  • 1/4 teaspoon curry
  • 1/4 teaspoon salt
Directions
Sauté onion until golden. Add zucchini and carrots. In a separate bowl, mix eggs, oats, and oil together. Weigh vegetables and mix with oat mixture and spices. Spray a loaf pan, and pour in mixture. Bake 45 minutes at 350°F.
