Whitefish with Fresh Herbs and Lime Recipe

Ingredients
4 firm white fish fillets (cod, sole, tilapia, etc.) (5 ounce )
1/4 cup fresh lime juice
4 garlic cloves, pressed or minced
1/2 cup chopped fresh parsley
1/2 cup chopped scallions
1 teaspoon chopped fresh rosemary or 1/2 teaspoon dried, crushed
1 teaspoon fresh thyme leaves or 1/2 teaspoon dried
1 teaspoon sweet paprika
1 cup diced fresh tomatoes
Directions
Preheat oven to 375-degrees. Rinse fish fillets, pat dry and set aside. In a medium bowl, mix together the lime juice, garlic, parsley, scallions, rosemary, thyme, paprika, and tomatoes. Place the fillets in an ungreased baking dish and spread the topping evenly over the top. Cover tightly with foil and bake for about 25 minutes, until the fish flakes easily with a fork.
Serve with side salad and baked or mashed potatoes and vegetable.
