Macaroni Chicken Salad Recipe

A tasty macaroni salad with the addition of chicken for an extra boost of flavor. This salad makes a nice side to any meal or a great light dinner salad all on its own.

  • 16 ounces small shell macaroni or rotini
  • 1 cup chopped celery
  • 2 tablespoons minced onion
  • 1 cup frozen peas
  • 2 cups dice chicken (rotisserie or canned)
  • 1 cup shredded cheese of choice
  • 2 1/2 cups Miracle Whip
  • 3 tablespoons sugar
  • 1/2 teaspoon Salt
  • pepper to taste
  • 2 tablespoons vinegar
  • 1/2 cup milk

  • Cook macaroni according to directions (with salt added to the water). Drain and rinse with cold water and allow to cool.
  • Mix dressing in order given and stir into cooled macaroni. Add celery and onions.
  • Place in refrigerator overnight.
  • The peas, chicken and cheese should be added the next morning. You may need more Miracle Whip if salad is too stiff.

"I made this chicken salad for our supper last night. I just made garlic toast to go with it. It made a nice light meal. I liked the salad but I think I could have added a little more sugar and a bit more salt. I added salt when I ate it but my husband thought it was ok without more salt."
