Greek Pocket Sandwiches with Cucumber Yogurt Sauce Recipe

Enjoy a budget friendly summer sandwich without forking over too much money at the fair. These will remind you of the delicious gyros at the fair. Pair them with some grilled sweet corn to complete the meal.

  • 1 1/2 pounds ground beef
  • 1 onion, minced
  • 2 cloves garlic, minced
  • 1/2 cup dry bread crumbs
  • 1 teaspoon ground coriander
  • 1 1/2 teaspoons dried oregano
  • salt and pepper, to taste
  • 1 teaspoon ground allspice
  • 1 teaspoon dried parsley
  • 4 pita rounds
  • 2 cups lettuce, shredded
  • 1 cup onion, chopped
  • 1 cup tomato, chopped
  • 1 cup plain yogurt
  • 1/2 cup fresh parsley, chopped
  • 1/2 cup cucumber, chopped or grated

For CUCUMBER-YOGURT SAUCE, combine ingredients in a bowl and let stand while preparing pocket sandwiches.

For POCKET FILLING, in a skillet cook meat, onion and garlic until brown. Add bread crumbs and seasonings; mix well. Simmer a few minutes over low heat. Add a tablespoon of water, if needed.

To ASSEMBLE, cut pita rounds in half. Fill each pocket with hot mixture, adding lettuce, onions, and tomatoes as desired. Top with cucumber-yogurt sauce.
