Ingredients
1/4 teaspoon Cayenne powder
1/2 yellow onion (medium)
1/2 cup peanuts, fried or roasted, chopped inch a blender
2 tablespoons fish sauce
4 teaspoons soy sauce
2 bunches Spring Onions
1/2 cup peanut oil
1/2 cup vinegar
1 cup water
8 cloves garlic
3/4 cup sugar
1/2 pound bean sprouts
1 pound dried rice noodles
1 pound shrimp (peeled and deveined) or chicken
Directions
Soak dried rice noodles for 1 hour in warm water. Mix peanuts, soy sauce, vinegar, fish sauce, sugar and cayenne in a blender. Preheat pan for 1 to 2 minutes on medium to high heat. Simmer peanut oil until hot. Add crushed garlic, stir 1 to 2 minutes. Add chopped yellow onion and shrimp (or chicken) to pan. Stir for 2 to 3 minutes. Add sauce mix from blender to pan, then add the water and bring to a boil. Drain noodles in colander, then add noodles to the mix in pan. Stir noodles in the sauce until water evaporates. Add bean sprouts and stir 1 to 2 minutes. Add spring onions and stir that 1 to 2 minutes.
