Remove meat from refrigerator and let stand in room for 30 minutes. Place in a shallow pan. Do not add water. Pre-heat oven to 475 degrees. Place meat in oven for 15-20 minutes or until browned. If possible, place on a small standing rack. Turn oven down to 350 degrees and roast uncovered for approximately 1 3/4 hours. When meat thermometer registers 160 degrees, the meat is well done.
Roast can be served immediately and will be very tender.
