Rio Grande Steak and Pepper Fajitas Recipe

  • 1 pound boneless beef sirloin steak
  • 1 cup picante sauce, divided
  • 2 peppers, cut into strips (medium)
  • 1 onion, sliced (medium)
  • 1 tablespoon oil
  • 1 8-inch flour tortillas
  • 1 cup cheese, shredded (cheddar, taco or Mexican mix)
Cook steak to desired doneness, brushing occasionally with part of the picante sauce. In a skillet, cook peppers and onions in hot oil until slightly tender. Add remaining picante sauce and heat through. Slice steak into thin strips. Place a little steak then pepper mix into tortilla and top with cheese.
