Quick and easy Mexican dish. I came up with this recipe because I was tired of the same old dishes my family likes. This was a big hit with everyone that has tried it. I just found some ingredients in my pantry, threw them in a pan, and put it in the oven. It is fast and easy for nights that you do not have much time. We normally eat this on soccer night after practice when we do not have much time before the kids go to bed.
