Lemon Jalapeno Chicken Recipe

Ingredients
  • 1 lemon
  • 3 jalapenos, diced
  • 2 tablespoons liquid smoke
  • 1 tablespoon basil
  • 1/3 cup BBQ sauce
  • 1/3 cup lemon juice
  • 4 chicken boneless / skinless filets
Directions
  • Cut the zest off the lemon and dice as small as you can get it.
  • Cut open the jalapenos and remove all the seeds, dice jalapenos as small as you can (leave the seeds in for hotter chicken.)
  • In food processor, mix lemon zest, diced jalapenos, liquid smoke, basil, BBQ sauce, and lemon juice. Puree the mixture until you get a sauce looking mixture.
  • Place sauce and chicken in a plastic bag and let marinade for 3 hours.
  • Place marinated chicken in large skillet, use the left over marinade sauce and coat the chicken both sides, cook med-high 3-6 minutes each side or until no longer pink. Marinade sauce should almost make a breading on the chicken.
  • Remove from heat when chicken is fully cooked and enjoy.
