Very moist banana bars! This recipe is doubled because I like my bars more like cake!

Ingredients
  • 1 cup butter
  • 3 cups sugar
  • 1 1/2 cups sour cream
  • 8 bananas, mashed
  • 4 eggs
  • 2 teaspoons vanilla
  • 4 cups flour
  • pinch salt
  • 2 teaspoons soda
  • nuts (optional)

Cream butter and sugar; add eggs. Beat well. Add sour cream, bananas, vanilla, flour, salt, soda and nuts. Beat well. Pour into a greased jelly roll pan and bake at 350 for about 30 minutes.

Frost with powdered sugar frosting, using coffee for the liquid, if desired.

"I halved this recipe and baked it in a 9x13 inch pan. They are REALLY moist! I did have to cook them longer than 30 minutes, more like 38, but could be something to do with the pan change. These are delicious the way they are and don't need any frosting!"
