Halupki (Polish) Recipe

  • 1 pound ground meat
  • 1/2 cup cooked rice
  • 1 teaspoon Salt
  • dash of pepper
  • 1 egg
  • 2 slices bacon
  • 1 onion (small)
  • 1 head cabbage
  • 1 can tomato soup
  • 1 can water
  • 1 tablespoon sugar
Cut bacon into small pieces; fry crisp. Remove and saut onions in bacon grease. Add onions and bacon to meat and rice, add salt, pepper and egg. Core cabbage and place head in boiling water, separate leaves and cut off heavy center part. Place scoop of meat mixture in leaf and roll tucking ends in. Put soup, water and sugar, pour over halupki. Cover and cook. When it starts boiling turn down to low heat and cook 1 hour. Can also be baked in oven. To test remove halupki from center of pan and cut in half; meat should be light brown. Note: place pieces of cabbage on bottom of pan to keep halupki from sticking to pan.
