Orange Walnut Biscotti Recipe

Ingredients
  • 2/3 cup walnuts
  • 1/4 cup sugar
  • 1 1/4 cups whole grain pastry flour
  • 1/4 cup cornmeal
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup butter, softened
  • 1/4 cup splenda
  • 2 Eggs
  • 2 teaspoons grated orange peel
  • 1/2 teaspoon orange extract
Directions
In a food processor, combine walnuts and 2 T. sugar. Process until walnuts are coarsely ground but not made into paste. Transfer to large bowl and add flour, cornmeal, baking powder, and salt. Stir until combined. In large bowl, using an electric mixer, beat butter, Splenda, and remaining 2 T. sugar until light and fluffy. Beat in eggs, orange peel, and extract. Gradually beat in flour mixture until smooth and thick. Divide the dough into two equal size pieces. Refrigerate for 30 minutes or until firm. Preheat oven to 350°. Coat baking sheet with cooking spray. Shape each piece of dough into a 12" long log and place both on the sprayed sheet. Bake 25-30 minutes or until golden. Remove the logs to wire racks to cool. Cut each log on a slight diagonal into 1/2" thick slices. Place slices, cut side down, on baking sheet and continue baking 5 minutes. Turn the slices over for an additional 5 minutes or until dry. Remove to wire racks to cool. Makes 24.
