Welsh Apple Cake Recipe

Ingredients
  • 4 cups apples - peeled and coarsely chopped
  • 2 cups sugar
  • 2 cups flour
  • 1 teaspoon salt
  • 2 teaspoons baking soda
  • 1 tablespoon cinnamon
  • 1 teaspoon vanilla
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1 cup walnuts - chopped
  • 1/4 cup butter - softened
  • 3 ounces cream cheese - softened
  • 3 tablespoons milk
  • 16 ounces powdered sugar
  • 1/2 cup pecans - chopped

  • Mix apples and sugar in a bowl.
  • Set aside for 20 minutes.
  • Sift flour, salt, baking soda, and cinnamon together.
  • In another bowl, beat eggs, vanilla, and oil. Mix until light and fluffy.
  • Add flour mixture and apple mixture; alternating to egg mixture.
  • Beat well after each addition.
  • Stir in walnuts.
  • Pour into a greased 9" X 13 " pan.
  • Bake at 350° F for 50-60 minutes or until cake tester is removed clean.
  • For the frosting, cream the butter, cream cheese, milk, and powdered sugar together.
  • Stir in pecans.
  • Spread over cooled cake.
