Cook potatoes according to package directions; drain well. Combine potatoes, eggs, ham or sausage, 1 cup tomatoes, 3/4 cup green peppers and onions in large bowl; stir well. Pour mixture into lightly-greased 13x9x2" baking dish. Bake, uncovered, at 325 for 40 minutes. Top with remaining 1/4 cup tomatoes and 1/4 cup green peppers. Sprinkle evenly with cheese. Bake an additional 5 minutes, or until cheese melts. Yield: 12 servings.
NOTE: I first met Corey during a snowstorm. He was delivering my mail on a bitterly cold, snowy day. I invited him in to warm up and have breakfast. He no longer delivers mail, but 15 years later, he still comes by for breakfast!
