Swedish Almond Cake Recipe

  • 1 1/4 sugar
  • 1 egg
  • 1 1/2 almond extract
  • 2/3 milk
  • 1 1/4 flour
  • 1/2 baking powder
  • 1 cube butter, melted
Beat together sugar, egg, extract and milk; stir in flour and baking powder. Then add butter. Mix well. Recipe calls for a fluted pan but a bread pan will work too. Pour into a greased pan. If using bread pan sprinkle slivered almonds on top of batter; fluted pan sprinkle slivered almonds in bottom of pan. Bake at 350° for 40 to 50 minutes or till edges are golden brown. Cool cake in pan completely before removing. Dust with powdered sugar if desired. (Due to the ridges in cake pan, slicing is a 'piece of cake').
