Ratatouille 2 Recipe

Ingredients
  • 1 onion, finely chopped
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 zucchini, diced (large)
  • 1/2 Red Bell Pepper, diced
  • 1 can corn, drained (8 ounce can)
  • 1 tomato, diced
  • 1/2 teaspoon cumin
  • 1 teaspoon Salt
  • 1/4 teaspoon pepper
  • Shredded cheddar cheese
Directions
Sauté onion until it begins to brown. Add garlic and stir one minute until fragrant. Do not allow garlic to brown. Add zucchini, bell pepper and corn. Stir, cover and cook for about 10 minutes. Uncover, add tomato and cumin. Cook uncovered for 15 to 20 minutes. Add salt and pepper. Sprinkle with cheese.
