Ingredients
3 medium to large tomatoes, cored and cut in 1/2
1 tablespoon jalapeño peppers - finely chopped
1 tablespoon fresh cilantro - chopped
1 tablespoon lime juice
1 teaspoon salt
ground pepper to taste

Heat oven to 400°.
Cut tomatoes in half.
Set them cutside down on a foil-lined baking sheet and cook until skin splits and tomatoes soften, approximately 10 minutes.
Cool slightly on sheet; then peel off the skins and discard.
Place tomatoes and remaining ingredients in a food processor and process until well blended.
Adjust seasoning to taste.
Store refrigerated in an air tight container.
