Yam Puffs Recipe

Ingredients
  • 3 or 2 large yams (small)
  • 2 tablespoons butter, melted
  • 1/2 teaspoon Salt
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon allspice
  • 1/2 cup pecans, chopped
  • 6 marshmallows
  • flour
Directions
1.) Wash, quarter & boil yams in their jackets, drain well, peel & mash & beat til potatoes are creamy.

2.) Mix in butter, salt, cinnamon, allspice & chopped pecans .

3.) Cut marshmallows in half, shape yam mixture around each marshmallow half creating the individual puffs (marshmallow is the center of each one), roll in flour and fry in deep fat until the puffs are slightly brown.

Serves four persons 3 each.

* Original contributor Mrs. Walter Carroll states if it is impossible to obtain yams, use ordinary sweet potatoes & add one tablespoon of sugar
