Mama's Pickles Recipe

Ingredients
  • 2 gallons cucumbers
  • 8 1/2 quarts cold water
  • 3 cups lime
  • 1ST BRINE:
  • 1 cup vinegar
  • 1 ounce red food coloring
  • 1 tablespoon alum
  • 2ND BRINE:
  • 3 cups vinegar
  • 3 cups water
  • 15 cups sugar
  • 10 sticks cinnamon
  • 1 package red hot cinnamon candies
Directions
Peel cucumbers and cut into rounds or spears by cleaning the seeds out.

Using ice cream buckets, combine the cucumbers, water and lime; let stand for 24 hours.

Drain and wash the cucumbers. Soak 3 hours in plain cold ice water.

Drain. Simmer cucumbers for 2 hours in 1st brine of vinegar, red food coloring, alum and enough water to cover the cucumbers.

Drain but don't rinse. Simmer cucumber in 2nd brine of vinegar, water, sugar cinnamon sticks and red hot cinnamon candies.

Drain and reheat the brine for 3 days.

Can the third day.
