CLEAR LEMON FILLING Recipe

Ingredients
  • 6 tablespoons sugar
  • 1 1/2 tablespoons cornstarch
  • 1/8 teaspoon salt
  • 1/4 cup water
  • 1 tablespoon butter
  • 1 tablespoon grated lemon rind
  • 1/2 cup fresh lemon juice
  • 1/2 cup coconut flakes
Directions
I use this filling recipe for a coconut cake. Whisk together the first 3 ingredients in a medium saucepan. Whisk in water until blended. Bring to a boil over medium heat. Cook, whisking constantly for 2 minutes. Remove from heat. Add butter, lemon rind and lemon juice. Cook over medium heat, whisking constantly for 1 to 2 minutes until slightly thickened. Remove from heat. Stir in coconut. Place saucepan in a large bowl of ice water for about 5 minutes, whisking often, until it is completely cool.
