Cajun Chicken 2 Recipe

Ingredients
  • Cajun Seasoning
  • 1/2 teaspoon red pepper
  • 1/2 teaspoon white pepper
  • 1/2 teaspoon black pepper
  • 2 teaspoons basil
  • 1 teaspoon paprika
  • 1 teaspoon dill
  • 1 teaspoon Salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon oregano
  • 1/2 teaspoon thyme
  • Cajun Chicken
  • 2 pounds chicken boneless & skinless
  • 1 onion, chopped (large)
  • 3 cups chicken stock
  • 1/2 teaspoon Tabasco sauce
  • 2 tablespoons sugar
  • 6 cups cooked pasta (we often use spaghetti)
  • 4 cloves garlic or 1 teaspoon crushed garlic
  • 2 tablespoons Worcestershire sauce
  • 1 can diced tomatoes (28 ounce can)
  • 1 cup green onion, chopped
Directions
Combine Cajun seasoning mix. Set aside. Cut 2 lbs. chicken into 1 inch cubes & toss with Cajun seasoning mix. Place a heavy saucepan over medium heat and spray with vegetable oil or butter. Saut onions and garlic until onions are tender. Add the remaining seasoning mix (excess from seasoning chicken) and continue to cook over medium heat for one minute. Stir in two cups of chicken stock along with 2 T. Worcestershire and 1/2 T. Tabasco sauce. Add the can of tomatoes and bring mixture to a gentle boil. Add 2 T. sugar and 1 C. green onion. Simmer uncovered for 20 minutes.

While sauce is cooking, place large saut pan over medium heat. Grease with vegetable oil or butter. In small batches, cook the chicken until tender and remove from pan. Repeat until all chicken is cooked. Mix the cooked chicken and tomato sauce together. Add remaining stock as needed to thin out sauce. Allow to cook for an additional 5 minutes.

To serve: Toss the pasta with the chicken & sauce. Serves 8. SPICY!
