Swiss Steak 26 Recipe

Ingredients
3 pounds Swiss steak (2 inches thick)
3/4 cup flour
1 teaspoon mustard (powder)
1 cup water
1 1/2 teaspoons salt
1/4 teaspoon pepper
1/3 cup butter
2 cups sliced onion
Directions
Sift dry ingredients together. With a potato masher or meat mallet, gradually beat the flour into the steak until it is absorbed. Brown steak in frying pan and place in a greased casserole dish. Rinse pan with 1 cup of water and butter and pour over steak. Arrange sliced onion on the top of the steak; cover and bake at 350° until tender. Serve with mashed potatoes garnished with parsley.
Note: 1 can of tomatoes may be added over steak before covering and baked.
