Spicy Honey Brushed Chicken Thighs Recipe

Ingredients
  • 2 teaspoons garlic powder
  • 2 teaspoons chili powder
  • 1 teaspoon salt
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground red pepper or black pepper
  • 8 chicken thighs, boneless, skinless
  • 6 tablespoons honey
  • 1 teaspoon cider vinegar

Preheat broiler.

In a large bowl, combine first 6 ingredients. Add chicken to bowl and toss to coat. Place chicken on a broiler pan coated with cooking spray. Broil chicken for 5 minutes on each side.

In a small bowl, stir the honey and vinegar together until well combined. Remove chicken from the oven; brush 1/4 cup of the honey mixture on the chicken. Return to oven and broil for 1 minute.

Remove chicken from oven and turn over, then brush with remaining honey mixture. Broil for 1 additional minute or until chicken is done.

NOTE: Chicken breasts may also be used, but will need to be cooked a little longer.

"There is nothing as unappetizing to me as a big chicken breast...just a large chunk of plain white meat that will end up dry and tasteless. The dark meat is so much more moist and tasty. We made this recipe for thighs and they were so good. It seems like a lot of spicy ingredients but somehow the honey moderates the spicy-ness. Of course, it can be tweaked to suit individual tastes."

"Great flavor. The amount of seasoning you use is a little scary, but the honey must mellow it out. We made both chicken breasts and thighs - the thighs were the favorite since they were much juicier."
