Coffee Cake

A quick bread type cake that is topped with a streusel topping, glazed frosting, or a melted sugar topping. Other ingredients sometimes included in the topping are cinnamon, nuts, fruits, and raisins. These cakes were traditionally served with coffee for breakfast or brunch. Coffee cakes may be leavened using two different leavening methods. One type is leavened by baking powder or baking soda included in the ingredients and another variety is leavened with yeast. Coffee cakes can be baked in most any style or type of baking pan. Some of the more popular baking pans used are bundt pans, tube pans, loaf pans, and rectangular, square or round cake pans.
