The eggs of the paddlefish. Paddlefish is a variety of fish that is also known as a spoonbill and is a relative of the sturgeon. The caviar produced from this species ranges in color from light gray to dark black and provides a salty, somewhat earthy flavor as an appetizer or complement to other foods.
