The grate is the part of the grill that the food is placed on. It is the only part of the grill that comes in direct contact with the food. The only time the food does not come in contact with the grate is if the food is placed in a foil pan, wrapped in foil and then placed on the grate, or if it is placed on a rotisserie attachment. The grate keeps the food from having direct contact with the heat source.
