Navy Bean

A pea-sized, off-white, oval shaped legume, which is also called the Yankee bean. Its name comes from the fact that it has been a staple food for the U.S. Navy since the mid-1800's. This bean is also referred to as the Boston bean, fagiloi, haricot blanc (white), or the pearl haricot bean. It is a common ingredient used in soups, salads, bean dishes (canned pork and beans), and chili. Cannellini, flagolets, great northern, or dry lima beans could be good substitutes when necessary.
