A sheep's milk and milk whey cheese originating in the Basque and Navarre regions of Spain. It is a hard, unpasteurized cheese that comes in various sized cylinders. The color of the cheese ranges from cream or yellow to almost orange. Idiazabal cheese has a distinctive smoky flavor and is delicious when sliced or grated onto grilled dishes or eaten plain as a snack. It is a good melting cheese and can add a nice flavor to salads and appetizers.
