Lecithin

A fatty substance that moisturizes, emulsifies and preserves food that is generally derived from egg yolks, soybeans and corn. It is an ingredient used in vegetable oil sprays, which can be used to grease pans for frying and sautéing foods instead of using high calorie oils.
