Bitter Chocolate

A pure, unsweetened cocoa liquor, which contains 50 percent cocoa butter and 50 percent chocolate solids. It is available in block form and is used as a baking chocolate. It is not palatable if eaten on its own but when mixed with sugar, butter and milk it creates a strong chocolate flavor. It is also referred to as "unsweetened chocolate."
