Yuzu

A type of citrus fruit, native to China, that is slightly smaller than an orange, more acidic than a lemon, and is used frequently in Asian cooking. The flavor is sour and it is usually not used for eating fresh like an orange or tangerine. In fact, it is used mainly for the aroma and flavor of the rind, which is added to various food dishes, beverages and food flavorings to improve the taste.
