A frozen mixture containing unsweetened fruit juices, fruit and sugar combined to provide a very tart and tangy flavor. It differs from sherbet in that it does not contain milk and may be flavored with liquor. It is sometimes referred to as "ICE" or granita, but both are more granular in texture than sorbet and granita contains more liquid. Sorbet is often served between the various courses of a meal to "cleanse the palate" enabling the flavor of the next food being served to be more distinct and fully tasted.
