Farmer Cheese

A cheese made from cow's milk that is available as a soft-textured variety consisting of small spreadable curds with a high moisture content or as a semi-dry, firm textured block that has been pressed to remove the moisture and to firm the consistency. Either type provides a smooth, mild to slightly tangy flavor. Low in fat content, this cheese is a good source of protein and calcium. When fresh, it is similar to ricotta cheese and can be substituted with either ricotta or cottage cheese for many recipes. As a pressed cheese, it can be sliced and crumbled to be used in salads, sandwiches, or for snacks.
