Caponata

A type of Italian vegetable spread that is usually prepared with eggplant, tomato, onion, olive oil, and capers. Occasionally, other ingredients are added such as celery, peppers, zucchini, and herbs. It is spread on crackers or Italian bread as an appetizer.
