20 pound turkey, brine the turkey with one cup of kosher salt and sugar for at least 12 hours.

  • 1 cup kosher salt
  • 1 cup kosher sugar or brown sugar
  • 5 bay leaves
  • 2 oranges
  • 1 clove garlic
  • Dissolve salt and sugar mix in 4 to 6 cups of water; then add oranges, bay leaves, and garlic in the brine.
  • Allow mixture to cool and add more water to cover turkey, soak overnight.
