Mexican Tortilla Casserole Recipe

Cheesy and creamy dish that will please everyone. This can be made in advance to throw into the oven on a busy night. Spice it up with mild to hot enchilada sauce.

  • 2 pounds ground beef
  • 1 onion, diced
  • 2 teaspoons garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 10 ounces enchilada sauce
  • 5 ounces evaporated milk
  • 1 can green chilies, diced
  • 2 cups monterey jack cheese, shredded
  • 10 corn tortillas, cut into triangles

Preheat oven to 350 degrees. Lightly grease a 13x9 inch baking dish. In a large skillet, brown ground beef and onion. Drain. Add seasonings, soups, enchilada sauce, milk and chilies. Bring to a boil. Remove from heat and stir in cheese until melted. Place 2 cups of mixture on the bottom of prepared baking dish. Top with tortilla pieces. Repeat layers, ending with the tortilla pieces. Bake for 25-30 minutes or until tortillas are crisp on top. Top with green onions, black olives and sour cream, if desired.
