SPINACH BLUEBERRY SALAD Recipe

Ingredients
  • SALAD
  • 1 package baby spinach leaves
  • 1 pint fresh blueberries
  • 1 cup finely chopped walnuts, toasted (microwave 30 - 60 seconds)
  • 1 cup grated jack cheese
  • Dressing
  • 1/2 cup vegetable oil
  • 3 tablespoons raspberry vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon sugar
Directions
Layer salad in bowl. Whisk dressing ingredients together and pour over salad just before serving. Toss well. Serves 8.
