Merry Berry Salad Recipe

Ingredients
  • 1 mixed salad greens (spinach & mixed greens) (10 ounce )
  • 1 diced red apple (medium)
  • 1 diced green apple (medium)
  • 1 cup shredded Parmesan cheese
  • 1/2 cup dried cranberries (craisins)
  • 1/2 cup slivered almonds, sugar coated
  • Dressing
  • 1 cup dried cranberries (craisins)
  • 1/2 cup sugar
  • 1/2 cup cider vinegar
  • 1/4 cup apple juice
  • 1 teaspoon Salt
  • 1 teaspoon ground mustard
  • 1 teaspoon grated onion
  • 1 cup oil
Directions
To sugar coat almonds: sprinkle heaping tablespoon sugar over almonds. Heat on medium/medium high until sugar melts. Stir constantly. Mix and toss 1st 6 ingredients. Combine dressing ingredients (except oil) in a blender. Cover and blend until smooth. Gradually add oil in. Drizzle over salad before serving.
