Avocado, Watermelon, and Spinach Salad Recipe

  • 2 avocados - large, peeled, pitted ,and diced
  • 4 cups watermelon - seeded and cubed into bite sized pieces
  • 4 cups spinach - fresh, washed
  • 1 tablespoon lemon juice
  • 1 cup balsamic vinaigrette dressing

  • Wash spinach.
  • Peel, seed and cube avocado.  Sprinkle avocado with lemon juice to prevent browning.  In a salad bowl, toss together the avocado, watermelon cubes, and spinach.
  • Stir in salad dressing just before serving.
